CARNITAS QUICK DINNER These 3 products are available at Trader Joe's. Many people avoid carnitas because of the high fat content. If you follow these simple instructions you can get rid of 95% of the fat: 1 pkg of cooked carnitas meat in fridge section of TJ's. 1 container of fresh pico-de-gallo salsa (hot or mild) 1 roll of cooked polenta (optional garnish: avocado and yogurt) 1. Remove wrapper and place carnitas meat in a glass container, cover with paper towel, heat for 2 minutes. Put meat on chopping board and let cool, while you: 2. Slice polenta roll into about 10 - 12 slices. (about 1/3' thick). Saute over med-high heat for about 3 min each side. (I use ghee or avocado oil for the saute. 3. Pull apart the cooled carnitas and remove all of the visible fat. There will be a lot! Tear or shred into bite-size pieces. 4. Place sautéed polenta circles in an ovenproof dish. Cover with carnitas pieces. Pour over pico-de-gallo salsa and serve! 5. I usually garnish with avocado slices and whole plain yogurt or sour cream. If you fix this early in the day, you can microwave the polenta-carnitas dish for about 2 - 3 min, then finish with salsa and garnish. Truly, 20 minutes is all it takes.
