Paris Treats

Hi friends,
When Sara and I were in Paris last month, we had an entree that was healthy, simple, delicious!  It consisted of 3 things:
A very large artichoke crown
a poached egg on top of the crown
a sauce to cover it.
viola!  fabulous dish!  It was presented with a few of the artichoke leaves around the perimeter of the plate, then the crown & egg in the center
 
As near as we could tell, the sauce resembled Thousand Island dressing, only lighter and not sweet.
I experimented and came up with a simple rendition of this sauce - and it is VERY versatile!  It works on any salad, shrimp dish, just anywhere you would think to use Thousand Island.  We gave up that dressing 30 years ago b/c of the high sugar content.
 
Try this:
Paris-pink salad dressing
1 box of Trader Joe's "Italian Tomato Starter Sauce"  (this sauce is fresh tomatoes, olive oil, garlic, etc)
a big glop of TJ's organic mayo!  I just put some mayo until it became the pink color I remembered in Paris -  about 3-4 Tbsp or more to taste
1/3 tsp sea salt or to taste  (I only use the Celtic Sea Salt grey minerals and it's worth it! The taste is incredible.  Salty but with 72 essential minerals)
1/4 tsp sugar
Whir it all together in your blender and use it on whatever you like.  I tried it on this
lentil salad:
1 box steamed lentils from TJ
2-3 organic celery ribs (only use organic celery as it is a very heavily pesticided crop, like bell peppers)
1 can packed-in-water artichoke hearts
1/2 - 1 cup chopped, fresh organic tomatoes  (the little cherry type are great for this, cut in half)
1 red onion, chopped fine
 
Mix it all up with 1/3 - 1/2 tsp sea salt, toss in some of the "paris-pink" salad dressing.  Top with some form of protein if making it a meal, like wild salmon, shrimp, avacado, chopped chicken.  I've tried them all!
 
I'm a lentil addict and now that you can get them already steamed at TJ's, it takes all the work out of lentil salad!
