Here's an adaptation of a recipe I saw in Real Simple. I made it simpler :-) Less than 30 min total. 1 lb grass-fed Angus beef (Tr Joe's) 2 onions, chopped 1 Tbsp minced garlic 1 Tbsp your favorite spice mix (I use basil or a Savory-Spice herb mix, like "Za'atar" ) 1 tsp sea salt 1/2 to 3/4 jar of julienne sun -dried tomatoes, drained (Tr Joe's) 4 cups chicken broth (I like Better than Bouillon organic chick broth paste - Mother's Mkt) 2 cans drained organic great northern beans (Tr Joe's) 1. Saute beef with salt, onions and garlic for about 8 - 10 min, til no longer pink. Add the Tbsp of spice mix. 2. Add 4 cups chick broth and the julienne sun-dried tomatoes & simmer for 5 min. 3. Add the drained beans, heat til warm. This "stew" is soupy so serve in bowls. * no need to drain the fat from the meat because grass-fed beef has a high omega3 oil content - making it much like fish oil. Very good for arteries. Serve with large green salad. |
