This is quick, easy, and absolutely loved by all! xo mary anne TACO CASSEROLE
1 lb grass-fed ground beef 1 med. yellow or white onion, chopped 15 oz can pinto beans, drained 8 oz can tomato sauce 1/4 cup mild salsa 1 Tbsp mild chili powder 1 tsp ground cumin 1/4 - 1/2 cup sliced black olives (small TJ can is perfect) 1 1/2 cups shredded 3-blend cheese (TJ's) 2 cups broken tortilla chips (optional - but this is what makes it "taco") 1 - 2 cups shredded lettuce 1/4 cup sliced green onions 8 oz whole milk plain yogurt
1. Place meat and chopped in prepared skillet (spray w/olive oil), cook, stir to break up, until done - 5 - 8 min. Drain off fat. 2. Add next 6 ingredients, stir, bring to boil. 3. Place mix in olive-oil-sprayed glass casserole dish (8 x 11) 4. Cover with cheese. 5. Bake at 350 cheese has melted and casserole is bubbling a bit. 6. Top with broken taco chips then garnish with green onion and yogurt.
