Tex-Mex Chicken

Hi friends,
Since discovering Trader Joe's new "fire roasted - onions, bellpeppers" I've found so many uses for them.  One day I had some already cooked chicken and put this together in 10 minutes:
 
                                                                                                  Quick Tex-Mex Chicken and Vegetables

1 pkg frozen fire roasted onions, bell peppers (Trader Joe's)
1/2 cup frozen roasted corn (TJ's)
1 cup chopped cooked chicken
1/2 bottle TJ's enchilada sauce
Put the onions & bell peppers in a hot skillet with 1 Tbsp coconut oil, stir and cook for a few min, then add the corn and cook for another 3-4 min.  Add the cooked cubed chicken, 1/2 bottle sauce, stir to heat, eat!  (Serves 2 - easy to double or triple!)
Serve with a side dish of organic broccoli and quinnoa cooked in chicken broth and tossed with 1/4 cup chopped sundried packed in olive oil tomatoes and a handful of crumbled goat cheese.
Nutrition tips:
I truly wish this frozen pkg was available in "organic" variety b/c bell peppers, along with berries and celery,  are the most pesticided of all foods.  So, to help out the liver out a bit, I usually add one whole chopped organic onion to the saute stage of the veggies and about 6-8 cloves crushed or chopped garlic (add garlic right at the last bit of cooking for the corn to keep it potent).  And organic broccoli and garlic are the grand-daddies of all vegetables that can detox pesticides from the liver..   we all should eat some cruciferous veggies every single day. (garlic, broccoli, cauliflower, kale, brussel sprouts, cabbage, bok choy)
