Vegetable Pie Suitable for Transform 30


VEGETABLE PIE

 

This recipe has been adapted from the "Magic Beans" cookbook and is suitable for the Transform30 program for the detox side of things if you omit the cheese. If you're doing T30 for weightloss as well, just eat smaller portions of the mashed potatoes.

 

4 servings mashed potatoes (make them from 2 med size russets or 1 pkg of Trader Joe's instant mashed potatoes. (This variety has no artificial ingredients and actually tastes real.

 

1 Tbsp olive oil

1 tsp basil, 1 tsp thyme, 1 tsp sea salt

1 onion, chopped

2 med carrots, sliced thin

15 oz can pinto beans, drained

14 1/2 oz can diced organic tomatoes (T.J.s) undrained

1 cup frozen organic corn, thawed.

8 oz tomato sauce

1 tsp worchester sauce + 1 tsp sugar (a tsp divided by 4 servings won't harm the de-tox)

1 cup shredded (your favorite) cheese (I like the 3-cheese grated pkg from T.J. for this)

 

1.  Prepare mashed potatoes

2.  Saute chopped onions, sliced carrots, all 3 spices, in olive oil until veg are tender

3.  Stir in pinto beans, chopped tomatoes, corn, tomato sauce, worchester sauce and sugar

4.  Bring to boiling while stirring frequently

5.  Transfer to prepared 8x8 baking dish

6.  Cover with thin layer mashed potatoes

7.  Sprinkle with cheese

8.  Bake at 350 for 25-30 min, or until cheese melts and casserole is bubbling

Yields a healthy 4 servings; make them smaller servings to continue
weight loss.
